The Sugar Cookie Upgraded and Grown Up

I’m pretty sure that the sugar cookie is loved by just about everyone and one doesn’t outgrow them, just like Cheerios. They can be kind of plain though and so when the Holidays come around, there are ways to dress up the classic goodness with special charms of the season.

One of the versions that I tried this past Christmas, was the filled sandwich version. After the cookies are baked, you can fill them with pretty much anything that you personally find appetizing. For one batch, I decided to use homemade apricot preserves. First, a great way to keep the filling in the cookie, a line of royal icing drawn on one of the cookies will help to keep the filling neatly inside.

         

Don’t be afraid to experiment and have fun with different designs and flavors. The traditional sugar cookie is like a bland canvas waiting for your creativity, or at least the ability to copy someone else and can be adapted for every holiday and occasion.
